In the Virgin Islands we like to eat so it’s no surprise that we have excellent chefs. Lueben Lynley Davis II is a Foodie’s chef. You will find some marvelous Surf, Turf and Rib Barbecue dishes on Lynley’s menu. Lynley’s dishes are mouthwatering. My favorite sauce is The Dirty Bird, sweet up front with a lil heat on the back end. Lynley’s inspiration come from his St Thomas roots and experience in the food preparation industry. The grandson of Vivian Spruave and second generation chef gives voice to his rich brand. Entrees come alive with his spices and sauces. Chef Taj’s Sushi & Sorbet
Chef Taj Siwatu, a Virgin Islander, executive chef and owner of Buddah Sushi Bar and Asian Grill in St Thomas. Mr. Siwatu discovered his culinary passion as a youngster. By middle school he was working in a restaurant. Chef studied culinary arts at Charlott Amalie High School. Later he would receive a Bachelor’s Degree in Culinary Arts from Johnson & Wales University. Chef Taj has a unique flair for blending Virgin Island, continental and Asian cuisine, notably Parrot Fish Sushi Rolls, Red Snapper Sashimi, Grilled NY Strip and his award winning Fireworks Wings. But, if it’s comfort food you crave, my personal favorite is Dragon Fruit Sorbet. His sorbetsare made from local fruits.
He enjoys his patrons’ enthusiasm for his latest creations. Some of Taj’s inspirations originate from childhood favorites and sweets. One fruit flavored delight is commonly referred to as “specials.” It evolved into his own Sorbets. When patrons, Claire Foster, wife of John Foster; John Foster Real Estate gifted Taj an ice cream Sorbet maker it began his adventure in local fruit flavors. Thus, we enjoy his signature Dragon Fruit, Mango and Passion Fruit Sorbets. They are absolutely decadent and some patrons have been known to top it off their Sorbet with a touch of rum. Yummy.
Chef Taj is very exacting in his standards for quality. His food is delicious, has visual appeal and will reward the palate’s of his most decerning patrons. My husband, Lueben and I enjoyed many evenings seated at Taj’s sushi bar enthralled by his skillful preparations. Always ready when he said, “try this.” Eat with your fingers. It’s expected. Dark Chocolate and Wine
What to do if friends drop in unexplectedly? I open a bottle of Merlot and lay out a plate dark chocolates. I have dietary issues so I read the ingredients on the back of my sweets and treats. We all have our favorites. I prefer Dove’s Dark Chocolates. Each bite is individually wrapped and its rich semisweet flavor blends well with my Merlot, but it’s your call. Remember to read the message on the inside of each Dove Chocolate wrapper. Enjoy.
